Chicken Salad Sandwich
Surely we all love a fancy cooked dinner, but if you don’t happen to be married to a Michelin-starred chef, the motivation to cook after a long work-day isn’t always easy to find. Therefore I love easy but creative recipes which can be prepared the day before. One of my favourites is the chicken salad sandwich, with lots of healthy ingredients such as apples, yoghurt and cranberries which gives it that special savoury taste.
You need:
a chicken breast
1/2 cup of dried cranberries
juice of one lime
fresh rosemary
one apple
1 1/2 cup greek yoghurt
salt, pepper and a splash of olive oil
1. Grill the chicken breast in a grilling pan in some olive oil until well done, flavour with salt and pepper and let cool.
2. In the meantime chop the apple, cranberries and rosemary, mix all together with lime juice and greek yoghurt.
3. Chop the chicken as well and add to the mixture, season with salt and pepper.
Enjoy the chicken spread on a slice of rustic toasted bread!
